Impact of restaurants in the development of gastronomic tourism

Interest in gastronomic tourism has been steadily increasing in the recent years. However, no study has been found on the impact of restaurants in gastronomic tourism. Literature review revealed a high level of neglect when it comes to the role and importance of restaurants in the development of gastronomic tourism. The purpose of the present study is, thus, to reveal the impact of restaurants in the development of gastronomic tourism. This study has great significance due to its being the first study analyzing the impact of restaurants in gastronomic tourism's development. With its original value, the study aims to contribute in gastronomic tourism by leading to efforts of creating a road map and increasing competitive advantage for restaurateurs in the development of gastronomic tourism as well as aiding them to aim at maximizing development of gastronomic tourism. In line with its purpose of contributing in gastronomic tourism's literature with an original research, the study involved a questionnaire implemented on restaurants and gastronomic facilities with tourism operation licenses from Ministry of Tourism. Reliability, factor and regression analyses were conducted on the obtained data. The results of the analysis showed that ambience, personnel, ingredient, presentation of food and drinks and products of restaurants are quite important in the development of gastronomic tourism. Restaurants need to pay attention on personnel, ingredients, presentation, product and ambience of the restaurant in order to enable development in gastronomic tourism.
